Rehearsal Dinner food!

As you know, we're having a North Carolina BBQ for our rehearsal dinner on the Thursday before the wedding. It will be at our beach house (the yellow one below), and we'll have amazing BBQ, all the sides, and, of course, beer!

Now, BBQ is a very complex food, you see. Is it barbecue or barbeque? Depends on where you are! I'll just stick with BBQ.


Here are some differences between different regions variation on BBQ:

Southerners agree, it's all about the pig

In the southern states, the BBQ is usually pork

Memphis-style: a tomato-based potion containing balanced levels of ingredients and seasonings. (Contrasts the sauces of the Carolinas...)

South Carolina: Hot mustard sauce

North Carolina: Spicy vinegar-based pepper sauce

In Texas, they do everything bigger; hence, this is why they prefer cow to pig - the BBQ is beef!

Texas-style: Brisket, ribs, etc. and different variations on sauces - usually, the spicier, the better
